One Years Food Storage of Rice and Beans is an excellent article by Pioneer Preppy. He has factored out how much is really needed in a storage plan. This is the most comprehensive article I have seen on storing rice and beans and is a must read for all of you who are into preparedness.

I commented on his site that I can up dried beans to have them handy for cooking. I don't always know a day ahead what I will want to cook. I love just going out to the canning jars and picking out some beans I have done myself. Of course it is way less expensive than buying metal cans at the grocery store and you can control what hidden ingredients are added as well making a more healthy product.
I also told him that when I am pressure canning and have come to the end of the run I usually have a couple of spaces left in the canner. I always can some dried beans and therefore fill up the canner not wasting any energy. I have canned beans that were not soaked first and they come out fine. I do check that the canning time is the same as what is required for the beans I choose. Usually it happens when I am canning meat and the times are similar.
I have not noticed any excessive gas as a result of canning the beans without soaking first but then Mister T does not complain much. Those that live in glass houses.......................
